Given that Clancy's Bar on Princes Street was the first pub in Ireland to serve a hot lunch, a tradition it still adheres to right up to this day, it is somewhat fitting to learn that the establishment's recent period of growth has included a venture into the catering business.

The seeds for Clancy's Premier Event Catering were initially planted when a friend of proprietor Colin Ross requested the help of Clancy's extended family for a wedding. Although the business of feeding large groups of people wasn't anything new to Colin and Executive Chef James Grimes, the task of catering specifically to some one else's designs for their special (one-off) day was a new experience that brought with it its own unique pressures. But they met the challenge and found it very much to their liking.

"We had the bar four or five years at that stage," says Colin. "It was just a favour for a friend, but we found there was something there. James already knew the business well, having worked in London in the past and one thing led to another and we just started taking more jobs on."

Having taken on the wedding game, more opportunities started to arise and the Clancy's Catering team duly set about expanding their reach. Event Management seemed a logical step forward – they already had the catering capabilities, coupled with the collective years of experience the team had in the bar and restaurant business, where the provision of entertainment is high on the agenda – key attributes if one is to ever succeed in the competitive world of event management.

Things were moving fast at this stage and the business rapidly expanding with each job seemingly leading to another. Having successfully moved into event management, Colin, James and their experienced team were to soon find themselves taking on the role of Facility Management.

"After we got the catering business off the ground we began doing functions, home-events, barbecues, things like that, some which were simply catering jobs, others which required event management. We work closely with our clients to ensure that the demands of any occasion, whether it be a 40th Birthday or summer barbecue organised by a company for its employees, or a product launch night, is met right down to the smallest detail whatever the requirements may be. We can provide everything, from the plates, glass, and ware hire to staff, and marquees, right on through to the food and entertainment at any venue they want.
