Wednesday, 15th May, 2019 4:30pm

The Soul in the City Festival returns to the Victorian Quarter from 31 May to 2 June. To celebrate participating venues will have a special cocktail available, which is so good, you'll want to try it at home after the festival finishes!

Soul gin fizz

· 8 sprigs fresh rosemary

· 1/2 cup freshly squeezed grapefruit juice

· 1/2 cup Beara Ocean Gin

· 1 lime, juiced

· 1/4 cup rosemary simple syrup

· 12 ounces club soda - or flavoured sparkling water (such as Fevertree)

· rosemary, for garnish - optional

· cucumber slices, for garnish – optional

Instructions:

1. In a small saucepan, heat rosemary sprigs, water and granulated sugar over medium-high heat

2. Bring mixture to a boil and stir until the sugar dissolves

3. Remove from heat, cover and steep for 30 minutes

4. Remove rosemary sprigs and store in the refrigerator until ready to use. Can be made ahead of time

5. To make the gin fizz cocktail, combine gin, grapefruit juice, lime juice and rosemary simple syrup in a shaker filled with ice

6. Strain into a glass, filled with ice. Top with club soda/sparkling water, and give one final stir to combine. Garnish with a rosemary sprig and cucumber, if desired!
