Chicken burgers can be a great option for barbeuces.

Delicious Persianstyle feta, pomegranate and walnut salad

The weather is improving again so perhaps a BBQ is in order! While beef burgers, chicken drumsticks and succulent Irish steaks are barbecue classics, why not try healthy chicken burgers instead?

A Persian style feta, pomegranate and walnut salad might be a great accompaniment too! This recipe comes from Aldi.

Ingredients:

130g bag of salad leaves

1 pomegranate, seeds and pith removed. Keep the seeds and the juice!

200g block of Greek feta cheese, crumbled

1 pack of baby cucumbers, sliced into thin coins

4 large spring onions, white and green part thinly sliced

Walnut halves (or use toasted flaked or blanched almonds if you prefer)

Method:

Arrange the leaves in a large salad bowl or platter.

Sprinkle over the other ingredients and toss.

Drizzle with extra virgin olive oil and squeeze of lime juice.

If you have any juice from the pomegranate, you can use that instead. Like most salads, this one is best assembled close to serving!
